Vitamin E, a peroxyl radical scavenger, is the main fat-soluble component of the antioxidant defense system of cells and is obtained exclusively from food. Plants synthesize eight forms of vitamin E from homogentisic acid, namely the alpha, beta, gamma and delta classes of tocopherol and tocotrienol. Although each of these molecules is a peroxyl radical scavenger, the human body appears to have a particular affinity for alpha-tocopherol.
Vitamin E, in general, has been shown to have potential benefits for cardiovascular health and its role in the development of different types of cancer. Vitamin E's ability to inhibit protein kinase C protects against inflammation, lipid accumulation in the aorta, diabetic vascular complications and platelet aggregation.
